Parchment sheets cut to the pans you already run

Five flat papers, every one cut to size before it reaches you: sheets for sheet pans, liners with folding corners, small squares, and the two base stocks sold plain. Pull one, drop it on the pan, and the pan goes in the oven.

What the Parchment Sheets range covers

Pre-cut sheets for sheet pans, pan liners with corners that fold up the sides, and small squares for proofing and patties. The two base stocks, unbleached kraft-tone and bleached white, are sold plain as well.

Everything here arrives as a flat stack in a case, not on a roll. Nobody tears, nobody measures, and the line never stops to fight a curl.

The range suits bakeries, meal-prep kitchens and caterers that line more pans in a morning than a roll can keep up with. Pre-cut sheets for sheet pans are where most first orders land.

Which sheet fits a half sheet pan?

A half sheet pan measures 18 by 13 in at the lip, but the flat floor takes a 12 by 16 in sheet. That cut covers the base with a finger of room each side, so it never rides the rim and stays flat under a convection fan.

Quarter sheet pans take 9 by 13 in. Full pans take 16 by 24 in, or 18 by 26 in if you want the paper to reach the rim edge to edge.

If your pans are an odd size, say so and we cut to that size instead. The sheet size by pan guide lists every common pan beside the cut that fits it.

How do pre-cut sheets behave in a hot oven?

A sheet with a silicone finish releases cookies, roasted vegetables and sugar work cleanly at 450°F (typical). Quilon-coated sheets are the lower-cost liner, good to 420°F, and most bread and pastry never asks for more.

Parchment browns fastest where it hangs over the pan edge, because that strip sits in moving air with no food to cool it. Cut the sheet to the pan floor and the scorching stops.

Keep it out of the broiler and away from the elements. Parchment is grease-resistant and heat-tolerant, not fireproof.

Comparing the five papers in the range

Each paper here does one job better than the other four. The table shows where each one belongs.

If you only ever line sheet pans, buy the pre-cut sheet. If you lift brownies and bars out whole, buy the liner. Squares cost less per piece than tearing a big sheet into quarters, and they stack straighter.

Unbleached or bleached white: which stock for your kitchen?

Unbleached parchment is the color of a kraft bag and has no chlorine bleaching in the pulp. It looks right under a sourdough loaf or a rustic galette in the case, and one color of ink prints well on it.

Bleached white parchment is the clean choice for pastry display, patisserie boxes and any sheet carrying a logo in two or more colors. Pale blues and pinks go muddy on kraft; on white they print true.

Both stocks take the same silicone or Quilon finish, so heat and release do not change with the color. The silicone, Quilon and unbleached comparison walks through the coating choice if that is the part you are unsure about.

What goes wrong when kitchens order sheets?

Most trouble with parchment sheets traces back to the order, not the oven. These are the ones we see most.

  • Ordering sheets larger than the pan floor, then folding the overhang, which traps steam and softens the base of the bake.
  • Choosing Quilon for caramel, brittle or cheese crisps, which want the two-sided silicone finish.
  • Buying squares when a liner with notched corners would lift the whole slab out of a brownie pan.
  • Printing two colors on unbleached stock when one color would read cleaner.
  • Running a case under a salamander or the broiler, which no parchment is made for.

Send a photo of your pan and the paper you use now. We will say which cut and stock to order before you commit to a case.

Parchment Sheets questions

Which paper in the Parchment Sheets range should a new bakery start with?

The 12 by 16 in pre-cut sheet for half sheet pans. It is the size most bakeries run, and it ships as a flat case ready to pull from.

Are all five sheet papers cut from the same stock?

They share two base stocks, unbleached kraft-tone and bleached white, with a silicone or Quilon finish. The difference is the cut: flat sheet, notched liner or small square.

Can I mix two sheet sizes in one order from this range?

Yes, as long as each size reaches the 1,000-sheet minimum. Each size is quoted and packed as its own line.

Do the flat sheets ship in a dispenser box or a plain case?

Pre-cut sheets ship as flat stacks in a plain case. Ask on the quote if you want a counter box; it depends on the sheet size.

What heat do the sheets in this range take?

Silicone-coated sheets to 450°F and Quilon or unbleached to 420°F, as typical trade figures. None are for broilers or open flames.

Can a plain pre-cut sheet go back on the next pan?

A silicone-coated sheet usually survives 2 to 3 bakes of dry goods such as cookies. Quilon sheets are single use.

Should I measure the pan floor or the lip for a flat sheet?

Measure the flat floor. A sheet cut to the floor lies flat; a sheet cut to the lip creeps up the sides and browns at the edge.

Will a logo print on the unbleached sheets as well as the white ones?

Yes, one color prints cleanly on kraft-tone stock. Light colors and fine detail read better on bleached white.

How many sheets come in a case from the Parchment Sheets range?

It depends on the sheet size and weight; a half sheet case is usually 1,000 sheets. The quote states the case count.

Does a case of sheets ship free anywhere in the US?

Yes, every case ships free with tracking to any US address and arrives in 2 to 3 business days after production.
