Who buys parchment by the roll?

Kitchens with pans of three different sizes, or none that match a standard cut. A roll lets the cook tear what the pan needs and nothing more.

Pizzerias pull a length for the peel, delis tear wrap by the sandwich, and wholesale bakeries run 1,000 ft rolls through a dispenser at the end of the line.

Plain roll or silicone roll: how do the two compare?

The two rolls look alike on the shelf. They differ in the finish, and the finish decides what sticks.

Our opinion: a pizzeria or a sandwich counter is happy on the Quilon roll. A bakery doing brittle, tuiles or sheet-pan roasting at 450°F wants the silicone roll, and will get 2 to 3 bakes from each length.

Which roll width matches your pans and peels?

Match the width to the short side of the pan. A 12 in roll suits quarter sheet pans and small trays. The 15 in roll, the one most kitchens pick, tears to fit a half sheet pan with no trimming.

Go to 18 in for full sheet pans and pizza peels, and 24 in when you line full pans edge to edge or wrap large catering trays.

Length is about how often you want to change the roll. A 164 ft roll fits a counter box; 500 ft and 1,000 ft rolls live in a wall or table dispenser. The full parchment size chart puts every pan beside its width.

How does paper off a roll behave on the line?

Paper off a roll keeps a curl for the first minute. Lay it coated side up, weight the far corner with the food, and it settles flat as the oven warms it.

Tear against a serrated bar for a straight edge. A ragged tear leaves a flap that lifts in a convection oven and browns before the bake does.

Both coatings hold their release through a normal bake. Neither will stand up to a broiler or a flame, and neither should touch an element.

A dispenser mounted beside the oven door dries the outer wraps and the paper tears short. Keep it on the prep side of the pass and the roll stays supple to the core.

Can a parchment roll be printed with a logo?

Storing and dispensing a 1,000 ft roll

A 1,000 ft roll is heavy. Keep it in the case until it goes into the dispenser, and keep it dry; damp parchment loses its stiffness and sticks to itself.

Keep rolls away from the dish pit and the fryer line. Grease on the outside of a roll travels inward with every turn.

Rotate stock so the oldest roll goes into the dispenser first. A roll that sits a year in a hot storeroom goes brittle at the outer wraps.
